Summer is officially here and I thought you’d like this very irresistible recipe as a
different sidedish for you and your family.
The trick to making these crispy outside and fluffy inside is to peel and slice the potatoes and par boil for approx. 5 min. In a heavy skillet add the olive oil at medium heat and add 3 cloves of garlic crushed for 1 minute to infuse the oil. Remove garlic and discard add potatoes and cook to golden. Add the remaining salt, pepper, parm, and parsley and toss. I also like to use Mrs. Dash to add more flavor. Yum!
